Solo Dinner

Kevin has been traveling for work this week so for the past few days I’ve been left to my own devices. Usually when it’s just me for dinner, I use this as an excuse to eat like crap. I’ll order indian food, grab a couple of slices of pizza on my way home, or eat something equally bad for me but delicious. I love to cook, but if I don’t have someone else around to appreciate my labor, I tend to be super lazy. Before I lived with Kevin my single dinners consisted of a whole lot of quesadillas.

Last night, I did something different.

As I was walking home from work I remembered that I had some buffalo mozzarella at home. Instead of stopping at the pizza place as I’d planned, I stopped at the corner market and picked up some basic but fresh ingredients. A crisp fresh plump and juicy heirloom tomato. A perfectly ripe mango. Basil. Brussels sprouts (and hey, did you know that it’s not brussel sprouts but brussels sprouts? This new knowledge recently blew my mind!).

I came home, poured myself a large glass of wine, and enjoyed a very basic but wonderful dinner for one. Caprese with a nice balsamic glaze for an appetizer. Roasted brussels sprouts for my main, and fresh mango for dessert.

Admittedly this is not the most well rounded meal, but it was a hell of a lot better for me than pizza, and I felt very sophisticated and European. Especially after I poured myself a second glass of wine.

And then I watched Chelsea Lately and any essence of European sophistication quickly went down the drain. Oh well.

Tonight Kevin and I are heading to Buffalo to spend some quality time with his family. I’m not excited for the red eye, but I am very very excited to not only see his family (well, my family now as well), but to enjoy a nice relaxing laid back labor day weekend. Kevin’s already made a bazillion plans for us, but I’m hoping to just lounge and eat and drink. Buffalo’s not exactly a foodie paradise, but Buffalonians sure do know how to drink, so that works for me!

@allie – thanks for sharing that recipe, I’ll have to try it next time I’m in the mood. I agree that brussels sprouts get such a bad rap, when they are so good! (and as someone that generally doesn’t like vegetables, that’s saying a lot!)
